If your using a laptop, then Dazzle is your friend. Its a USB capture card, so it connects straight into your PC.
All you really need is splitters to split the connection between your xbox and the capture card. (Put easier, you need these splitters to be able to play on your TV and be able to see it on your computer screen)

Go for the Video Creator or Video Creator Plus :)

yeah don't try to film by using just your computer screen, the capture card takes a few seconds to register whats on screen and it will seem like your lagging, so yeah get a splitter. They're hard to find nowadays but I found one at Radioshack for like 20-30 bucks
If you're worried about taking stuff apart, don't be just get an external usb capture card. Internal ones are good but a pain in the ass.
Also note that just cuz you have the card doesn't mean you can start capturing. You will need a program like Nero, Pinnacle Studios, or CaptureFlux to be able to save what you film.

Took the words right out of my mouth, Ayton. Or maybe it's took the words right from my fingertips. Anyways, yes, a Dazzle is probably the easiest capture card you can use. And you will need some splitters because it's a pain to film something through a tiny preview screen. Best Buy has some pretty cheap ones that have been working for me so far (http://www.bestbuy.com/site/Dynex%26%23174%3B+-+RCA+Y-Adapter/9390633.p?id=1218097973202&skuId=9390633&st=rca%20splitter&cp=1&lp=7)(just remember to get three). As Fuzz said, you'll need a program to actually do some capturing. Luckily, Dazzles come with Pinnacle Studios which is just about as easy to use as the Dazzle itself. I just recommend not to edit with Pinnacle Studios since it sucks at rendering videos.
So, then, you'll have to get a video editing program. Windows Movie Maker is a great program for beginning editors and for simple editing. Plus, it's right there on your computer, but it has its limitations (such as randomly shutting down...). The next step up (a big step) from there is probably Sony Vegas Pro (http://www.sonycreativesoftware.com/vegaspro) which has so much editing tools on there that you don't know where to start. It's just about limitless in its editing capabilities, but...it's incredibly expensive. So, instead, I would recommend (if you want to go in that direction), to buy Vegas Movie Studio (http://www.sonycreativesoftware.com/moviestudio), Vegas Movie Studio Platinum (http://www.sonycreativesoftware.com/moviestudiope), or Vegas Studio Platinum Pro Pack (http://www.sonycreativesoftware.com/moviestudiopp) which are basically cheaper, more limited versions of Sony Vegas Pro. Without going into a lot of detail in which ones do what, you can compare each one with this nifty chart (http://www.sonycreativesoftware.com/moviestudiopp/compare).
Phew. Hope that's enough information for you.
